Globe Artichokes - How to Cook

Ingredients:
 
Method :
1. Begin by soaking them in a cold salt bath upside down. [this is not essential but it loosens and flushes out any insects]

2. Give them a shake and roughly dry them.

3. Snap off the stem near to the head.

4. Rub the exposed flesh with lemon juice to stop browing.

5. Bring a pan of salted water with the juice of a lemon to the boil [or a few splashes of white wine vinegar]

6. Put the artichokes into the boiling water stem end down, bring back to boil and simmer for 30 - 40 mins. the outer leaves shuold pull away easily.

7. Serve at once with melted butter with a splash of lemon juice, or a freshly made vinagrette dressing.
