Stuffed Pepper - Basil and Tomato

Ingredients:

3 anchovy fillets - chopped
|

10 basil leaves - roughly ripped
|

1/2 garlic clove - crushed

freshly milled black pepper

| Method : |
1. Preheat the oven to 220C/425F/Gas 7. 2. Place the halfed pepper onto a non-stick-baking tray. 3. Chop the tomoto into cubes. 4. Put the crushed garlic, chopped anchovies, tomatoes, basil leaves into pepper half/s. 5. Drizzle with olive oil and a good sprinkle of freshly ground black pepper. 6. Place into oven and bake for 20 mins.
