Stuffed Pepper - Basil and Tomato

Prep Time: 5 mins Cooking Time : 20 mins Serves :
 

 
Ingredients:
> tomato
> 3 anchovy fillets - chopped
> 10 basil leaves - roughly ripped
> 1/2 garlic clove - crushed
> freshly milled black pepper
 
Method :
1. Preheat the oven to 220C/425F/Gas 7.
2. Place the halfed pepper onto a non-stick-baking tray.
3. Chop the tomoto into cubes.
4. Put the crushed garlic, chopped anchovies, tomatoes, basil leaves into pepper half/s.
5. Drizzle with olive oil and a good sprinkle of freshly ground black pepper.
