Stuffed Pepper - Olives & Cream

Ingredients:

½ red pepper, cut in half lengthways and seeds removed
|

drizzle olive oil
|

1 free-range egg
|
| > |
1-2 tbsp double cream
|
| > |
salt and freshly ground black pepper
|

1 tbsp chopped chives
|
| > |
55g/2oz black olives, pitted and chopped
|
| > |
½ red pepper, seeds removed and sliced thinly
|
| > |
handful fresh herbs, such as basil, parsley and mint
|

drizzle olive oil

| Method : |
1. Preheat the oven to 220C/425F/Gas 7. 2. Place the pepper half on a baking tray and drizzle with olive oil. Roast in the oven for 10-12 minutes, to soften. 3. Meanwhile, whisk the egg in a bowl with the cream. Stir in the seasoning, chives and olives. 4. Remove the pepper from the oven and pour the egg mixture inside. Return to the oven and bake for 8-10 minutes, until set and golden. 5. To serve, toss the pepper slices, herbs, olive oil and seasoning in a bowl. Transfer to a serving plate and serve the stuffed pepper alongside.
