Stuffed Pepper - Minty Broad Beans & Stilton

Ingredients:
> 2 tbsp olive oil
> 1 red pepper, cut in half
> 55g/2oz unsalted butter
> 55g/2oz podded broad beans, cooked
> 1 tbsp fresh parsley, chopped
> 1 tbsp fresh mint, chopped
> 2 slices stilton
 
Method :
1. Preheat the oven to 220C/425F/Gas 7.
2. Heat the oil in a pan and add the pepper halves. Transfer to the oven for 8-10 minutes, to soften.
3. Remove from the oven and divide the butter, beans, herbs and stilton between each pepper half.
4. Return to the oven and cook for 8-10 minutes, or until golden brown. Remove from the oven and serve.
