Stuffed Pepper - Minty Broad Beans & Stilton

Ingredients:

2 tbsp olive oil
|

1 red pepper, cut in half
|

55g/2oz unsalted butter
|
| > |
55g/2oz podded broad beans, cooked
|
| > |
1 tbsp fresh parsley, chopped
|
| > |
1 tbsp fresh mint, chopped
|
| > |
2 slices stilton
|

| Method : |
1. Preheat the oven to 220C/425F/Gas 7. 2. Heat the oil in a pan and add the pepper halves. Transfer to the oven for 8-10 minutes, to soften. 3. Remove from the oven and divide the butter, beans, herbs and stilton between each pepper half. 4. Return to the oven and cook for 8-10 minutes, or until golden brown. Remove from the oven and serve.
