Quick coq au vin

Ingredients:

1 tbsp olive oil

½ onion, chopped
|

¼ pepper, chopped
|

½ mushroom, sliced

1 chicken thigh, skinned, bone removed and cut into slices

½ glass red wine
|

handful of fresh tarragon, roughly chopped
|

handful of fresh parsley, roughly chopped

salt and freshly ground black pepper

For the mashed potato
|

½ potato, cut into cubes
|

1 tbsp butter
|
| > |
handful of fresh parsley, roughly chopped

| Method : |
1. In a saucepan heat the oil and fry the onion, pepper, mushroom and chicken for 4-5 minutes. 2. Add the red wine and cook for 8-10 minutes until chicken is cooked through. 3. Stir through the herbs and season with salt and pepper and serve. 4. To make the mashed potato, fill a large saucepan with water and add the potato and a pinch of salt. 5. Bring the potatoes to the boil and cook for ten minutes. 6. Remove from heat and mash together with the butter and parsley.
