Potato, leek and garlic gratin

Ingredients:

1 tbsp olive oil

1 leek, halved length wise, thinly sliced and washed

Salt and pepper

5 cloves of garlic, finely chopped

300mls cream

300mls milk

1 bay leaf

140gms grated cheese, you can use a mixture of gruyere and parmesan

675gms of large floury potatoes peeled and thinly sliced

24 black olives pitted and coarsely chopped

| Method : |
| Sweat off the garlic and leeks in a large frying pan in the olive oil. Pour the milk and cream into a sauce pan with the bay leaf salt and pepper. Heat for 15 minutes and strain. Pre heat the oven to 190c gas 5 and in a greased baking dish layer up the potatoes, leek mixture, olives and cheese. Finley pour over the milk and cream. Cover the dish and bake for 40 minutes. Uncover and cook for a further 15 minutes. Enjoy with crusty bread. |
