Ingredients:

200gms plain flour ( you can us half and half plain, wholemeal)

75gms butter

1 egg

3 eggs beaten

100mls of milk

75mls of cream or crème fresh

1 small peeled and chopped onion

50gms of washed, dried and shredded spinach

Pinch of ground nutmeg

25gms of cheese. ( can be any you like ie blue, goats etc.)

Salt and pepper to taste

Pastry Method
Sieve the flour into a bowl and rub in the butter using our fingertips until the mixture resembles bread crumbs. Add the egg and mix it in with blunt knife. Add a little cold water and use your hand to bring mixture together into a ball. Rest the pastry in the fridge. Pre heat the oven to 200c gas 6. Grease a flan tin 9inch. And roll out the pastry a little bigger than the tin add line the tin with the pastry. Pushing the pastry into the corners. Roll the rolling pin over the top of the tin to cut off the excess pastry. Bake the pastry case blind. [prick with fork and cover with grease proof paper and put some baking beans or dried butter beans and cook for 10 minutes, remove the beans and grease proof and bake for another 10minutes.]
Filling Method
Combine all ingredients and pour into base add cook for approx 25 minutes or until golden. |
