| Layer up the sliced veg in a small buttered casserole dish .Add a splash of chicken stock and a tablespoon of olive oil, season quite hard. Cover with lid or tin foil. Bake in a moderate oven for 1 and a half hours, remove lid for the last half hour. Serve with hot roast meat or a rich tomato sauce. | ||||||||
