Potato and veg bake

Ingredients:

4 large potatoes, scrubbed and sliced
|

2 beetroot peeled and sliced (do these last because they bleed)
|

1 large carrot peeled and sliced
|

1 onion peeled and sliced

| Method : |
| Layer up the sliced veg in a small buttered casserole dish .Add a splash of chicken stock and a tablespoon of olive oil, season quite hard. Cover with lid or tin foil. Bake in a moderate oven for 1 and a half hours, remove lid for the last half hour. Serve with hot roast meat or a rich tomato sauce. |
