Family left over supper

Ingredients:

1 medium onion peeled and chopped
|

3 cloves of garlic, peeled and chopped
|

3 oz of finely diced veg, i.e. beans, mushrooms, peppers or leeks

3 tbsp olive oil.

2 pt chicken stock
|

7oz rice

Leftover meat, as much or as little as you like. Shredded

2tbsp chopped basil
|
| > |
Salt and pepper to taste

Soy sauce optional.

| Method : |
| Fry the onions, garlic and veg off in the hot oil until soft. Add the stock and rice and stir. Cook for 15 minutes. Season to taste and drain , serve sprinkled with basil, and some soy if desired. |
