Family left over supper

Prep Time: 10mins Cooking Time : 15 mins Serves :
 

 
Ingredients:
> 1 medium onion peeled and chopped
> 3 cloves of garlic, peeled and chopped
> 3 oz of finely diced veg, i.e. beans, mushrooms, peppers or leeks
> 3 tbsp olive oil.
> 2 pt chicken stock
> 7oz rice
> Leftover meat, as much or as little as you like. Shredded
> 2tbsp chopped basil
> Salt and pepper to taste
> Soy sauce optional.
 
Method :
Fry the onions, garlic and veg off in the hot oil until soft. Add the stock and rice and stir. Cook for 15 minutes. Season to taste and drain , serve sprinkled with basil, and some soy if desired.
