Fennel, Chorizo and Pak Choi salad

Ingredients:
> Sliced chorizo
> ½ fennel, thinly sliced
> ¼ red pepper, sliced
> 2 tbsp olive oil
> 2 tbsp white wine vinegar
> 1 large handful pak choi stems sliced
 
Method :
1. Fry the chorizo in some olive oil on low heat for 2-3 minutes.
2. To make the fennel salad, in a bowl mix all the ingredients together adding the lightly fried chorizo with the vinegar.
