Fennel, Chorizo and Pak Choi salad

Ingredients:

Sliced chorizo
|

½ fennel, thinly sliced
|

¼ red pepper, sliced
|
| > |
2 tbsp olive oil
|

2 tbsp white wine vinegar
|
| > |
1 large handful pak choi stems sliced
|

| Method : |
1. Fry the chorizo in some olive oil on low heat for 2-3 minutes. 2. To make the fennel salad, in a bowl mix all the ingredients together adding the lightly fried chorizo with the vinegar. 3. Season with salt and freshly ground black pepper to serve.
