Honey mustard gammon with bubble and squeak rice

Ingredients:
> For the honey and mustard gammon
> 70g/2˝oz gammon
> 1 tbsp honey
> 1 tbsp wholegrain mustard
> For the bubble ''n'' squeak rice
> 1 tbsp olive oil
> ˝ onion, chopped
> 1 garlic clove, finely chopped
> 3 tbsp purple sprouting broccoli stalks, cut to 2.5cm (1in) pieces
> 2 tbsp gammon, cut into small dice
> 140g/5oz rice, cooked as per packet instructions, drained
 
Method :
1. Preheat a griddle pan.
2. Place the gammon onto a plate and spread the honey and mustard all over it.
3. Place the glazed gammon onto the hot griddle pan, cook for 3-4 minutes on each side.
4. Meanwhile, cook the bubble ''n'' squeak rice. Heat the olive oil in a large pan or wok. Add the chopped onion and the garlic, fry for 1-2 minutes.
5. Add the broccoli ends and gammon pieces and cook for a further two minutes.
6. Stir in the cooked rice, and continue cooking for 1-2 minutes.
