Honey mustard gammon with bubble and squeak rice

Ingredients:

For the honey and mustard gammon

70g/2˝oz gammon
|

1 tbsp honey
|
| > |
1 tbsp wholegrain mustard
|

For the bubble ''n'' squeak rice
|

1 tbsp olive oil
|
| > |
˝ onion, chopped
|
| > |
1 garlic clove, finely chopped
|

3 tbsp purple sprouting broccoli stalks, cut to 2.5cm (1in) pieces
|

2 tbsp gammon, cut into small dice
|

140g/5oz rice, cooked as per packet instructions, drained

| Method : |
1. Preheat a griddle pan. 2. Place the gammon onto a plate and spread the honey and mustard all over it. 3. Place the glazed gammon onto the hot griddle pan, cook for 3-4 minutes on each side. 4. Meanwhile, cook the bubble ''n'' squeak rice. Heat the olive oil in a large pan or wok. Add the chopped onion and the garlic, fry for 1-2 minutes. 5. Add the broccoli ends and gammon pieces and cook for a further two minutes. 6. Stir in the cooked rice, and continue cooking for 1-2 minutes. 7. Serve together on a plate.
