INGREDIENTS 2 oz. raisins 1 lb. cooked mutton or lamb 2 oz. currants 10 oz. long grain brown rice 2 oz. pine nuts 1 lge. onion, peeled & sliced 2 cloves garlic, crushed 1 beef tomato or 3 smaller tomatoes, salt & pepper peeled and sliced olive oil & butter yoghurt or crème fraiche to serve ½ lemon
METHOD 1. Put the rice in a saucepan of boiling water, add half a lemon and some salt and simmer for approx. 45 minutes or until just tender. Drain and remove lemon. 2. Meanwhile, heat the olive oil and butter in a frying pan and sautée the onions, garlic and tomatoes until softened. 3. Stir in the rest of the ingredients and heat gently, stirring frequently. Season with salt and pepper to taste. When thoroughly warmed through, stir in the rice and serve with the yoghurt or crème fraiche.
