Swede and bacon bake

25g butter 1 large onion chopped 1 garlic clove crushed 6 rashers streaky bacon take rind off and chop 125g sliced mushrooms 300ml stock(meat or veg) 450g swede peeled and cut into slices salt and pepper Melt the butter, add the onions, garlic and bacon, fry gently for 5 minutes Add the mushrooms and continue to cook for 3-4 minutes Stir in the flour and cook for 1 minute, remove the pan from the heat and gradually stir in the stock and seasoning. Return to the heat and slowly bring to the bouil stirring until thickened. Arrange the swede slices in an ovenproof dish, pour over the sauce, cover and cook in the oven 190c 375f gas mark 5 for about an hour or until swede is tender.
