Northumbrian Sweet & Sour Pork

Ingredients:

Pack of G & S Organci diced pork
|

3 tbsp oil [see method]
|
| > |
1 large onion chopped [large chunks]

1 green pepper - chopped [large chunks]

2 large tbsps chutney [see method]

2 inches tomato puree

| > |
3/4 pint water

few drops tabasco, hot chilli sauce [optional]

This is a take on traditional sweet and sour pork.
I used Apple Chutney in this recipe, but it could work equally well with plum, onion, mango or indeed any sweet chutnies you have lying around.
Again I used sesame oil [not toasted sesame oil] but you could use sunflower, rapeseed or any oil with a high burning point.
1. Heat a large frying pan or wok, till it is smoking.
2. Add a good glug of oil [of choice]
3. Add the chopped oinions and chopped pork and stir till pork is browned.
4. Add chopped green peppers, and stir for about 5 mins.
5. Add tomato puree and water, and turn heat down and simmer for about 20 mins.
6. Add two hearty tablespoons of chutney [of choice], the soy sauce and a few drops of tabasco or hot chilli sauce [optional], and cook for a further 5 - 10 mins.
Serve with rice. |
