Meatballs with Tomato Sauce

Ingredients:

G & S Organic sausage meat
|

olive oil
|

5/6 large tomatoes [or 1 can tomatoes]
|

1 crushed garlic clove
|

| Method : |
1. Wet your hands and form meatball shapes using the G & S organic sausage meat. [with wet hands the meat does not stick to you]
2. Gently brown the meatballs in a little oil, remove to a plate.
3. Roughly chop some fresh tomatoes, or use a can of tomatoes. Put them into a pan with a crushed garlic clove and a good glug of olive oil.
4. Cook the tomatoes till the tomatoes and oil seperate, anything up to 40 mins [but quite honestly you don''t need to do this - just until the tomatoes turn very soft]
5. At this point I whizz the tomatoes up with a hand blender, till they are smooth [sometimes with a few bits in].
6. Then put the meatballs into the tomato sauce, and heat gently for about 10 mins, season well to taste.
7. They are ready at this point - so serve with pasta, salad and some crusty bread.
[Before returning the meatballs to the pan, you can add any number of ingredients to the tomato sauce to make it a bit different. Below are a few ideas:
i. Freshly ripped Basil leaves ii. Olives iii. Anchovies iv. Dried Chilli powder or better still dried crushed chillis v. Finely chopped pancetta [or at a push finely chopped grilled streaky smoked bacon] |
